Bright lemon, garlic, tender salmon, and crisp roasted green beans make this an easy weeknight dinner that feels a little more special than the effort required. The salmon provides plenty of protein and satisfying fats, while the green beans add vegetables and fiber. Add your favorite whole-grain or higher-fiber carbohydrate when you want a heartier meal.
Prep time: 10 minutes
Cook time: 15–18 minutes
Servings: 4
Ingredients
For the salmon
- 4 salmon fillets, about 5–6 oz each
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Lemon wedges for serving
- Fresh parsley, optional
For the Parmesan green beans
- 1 lb fresh green beans, trimmed
- 1 tablespoon olive oil
- ⅓ cup finely grated Parmesan
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- Pinch of salt
Instructions
1. Preheat the oven.
Heat the oven to 425°F. Line a large sheet pan with parchment paper or lightly coat it with cooking spray.
2. Start the green beans.
Toss the green beans with olive oil, Parmesan, garlic powder, black pepper, and a small pinch of salt. Spread them across one side of the sheet pan.
3. Season the salmon.
Pat the salmon dry. Combine the olive oil, minced garlic, lemon juice, lemon zest, Italian seasoning, smoked paprika, salt, and pepper. Brush the mixture over the salmon.
4. Add the salmon.
Place the salmon on the other side of the pan and roast for approximately 12–15 minutes, depending on the thickness of the fillets. Cook fish to a safe internal temperature appropriate for your preparation and preference; USDA guidance recommends 145°F for fish.
5. Crisp the green beans.
If you'd like a little more browning, remove the cooked salmon and return the green beans to the oven for another 2–3 minutes.
6. Serve.
Finish with fresh parsley and a squeeze of lemon.
💚 Why This Meal Works
This dinner naturally centers the plate around protein, vegetables, and satisfying fats. Salmon also provides omega-3 fatty acids, while green beans contribute fiber and volume.
Rather than treating carbohydrates as something that must always be avoided, you can add a moderate portion of quinoa, brown rice, farro, lentils, or roasted sweet potato when you want a more substantial meal.
Meal-Prep Tip
Cook an extra salmon fillet and extra green beans. The leftovers can become an easy lunch the following day—try flaking the cold salmon over greens with cucumber and a simple lemon vinaigrette.
Easy Swaps
Don't like salmon? Try the same lemon-garlic seasoning on chicken breast.
For a dairy-free version, leave off the Parmesan and roast the green beans with garlic, olive oil, lemon zest, and sliced almonds instead.
