Smoky Ranch Roasted Chickpeas

 


Crunchy, savory, and a little smoky, these roasted chickpeas are an easy alternative when you're craving something snacky and salty. Chickpeas provide both fiber and plant-based protein, while a simple homemade ranch-inspired seasoning gives them plenty of flavor without needing a long ingredient list.

Ingredients

  • 1 can (15 oz) chickpeas
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill
  • ½ teaspoon dried parsley
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Optional for a little heat:

  • Pinch of cayenne pepper or crushed red pepper

Instructions

1. Preheat the oven.
Heat your oven to 400°F.

2. Dry the chickpeas well.
Drain and rinse the chickpeas, then spread them onto a clean kitchen towel or paper towels. Gently pat them as dry as possible. Removing excess moisture helps them become crispier in the oven.

3. Season.
Transfer the chickpeas to a bowl. Toss with olive oil, garlic powder, onion powder, dill, parsley, smoked paprika, salt, and black pepper.

4. Roast.
Spread the chickpeas in a single layer on a baking sheet. Roast for approximately 30–40 minutes, shaking the pan every 10–15 minutes, until they're golden and crisp.

5. Cool before snacking.
Let them cool on the baking sheet. They'll become a little crispier as they cool.
