Rich, fudgy, and chocolatey, these Flourless Chocolate Peanut Butter Brownie Bites are made with peanut butter, cocoa, eggs, and allulose for a sweet treat without relying on traditional added sugar. They're individually portioned, easy to freeze, and proof that a balanced approach to insulin resistance can still leave room for dessert.

Ingredients

  • ¾ cup natural creamy peanut butter
  • 2 large eggs
  • ⅓ cup granulated allulose
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup unsweetened milk of choice
  • ¼ cup chopped walnuts or pecans, optional
  • ¼ cup dark chocolate chips, optional

Instructions

  1. Preheat the oven. Heat your oven to 350°F. Lightly grease a 12-cup muffin pan or use silicone muffin liners.
  2. Mix the wet ingredients. In a medium bowl, whisk together the peanut butter, eggs, allulose, vanilla, and milk until smooth.
  3. Add the dry ingredients. Stir in the cocoa powder, baking soda, and salt until just combined.
  4. Fold in the chopped nuts and/or dark chocolate chips if you're using them.
