Ingredients

For the chicken

  • 1 lb boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of ½ lemon

For the bowls

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups chopped romaine or mixed greens
  • 1 large cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • ½ cup crumbled feta, optional
  • ¼ cup Kalamata olives, sliced
  • 2 tablespoons chopped fresh parsley

Lemon-Tahini Dressing

  • ¼ cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 small garlic clove, minced
  • 2–4 tablespoons water, as needed
  • Salt and pepper to taste

Instructions

1. Season the chicken.
Coat the chicken with olive oil, oregano, garlic powder, smoked paprika, salt, pepper, and lemon juice.

2. Cook.
Cook in a skillet over medium heat for about 6–7 minutes per side, or until the thickest part reaches 165°F. Let it rest for 5 minutes before slicing.

3. Make the dressing.
Whisk together the tahini, lemon juice, olive oil, garlic, salt, and pepper. Add water a tablespoon at a time until it's creamy and pourable.

4. Build the bowls.
Divide the greens among four bowls. Add cucumber, tomatoes, red onion, chickpeas, olives, feta, and sliced chicken.

5. Finish.
Drizzle with lemon-tahini dressing and sprinkle with parsley.
