💚 Why this combination works
Oats don't have to be off the table when you're thinking about insulin resistance. Instead, this recipe pairs the carbohydrate-containing oats and strawberries with protein from Greek yogurt, fiber from oats and chia seeds, and fat from almond butter and almonds.
Individual blood-glucose responses can vary, so portions and ingredient combinations can be adjusted to suit your needs.
Easy swaps
Use lactose-free Greek yogurt if preferred. Peanut butter can replace almond butter, and blueberries or raspberries work beautifully in place of strawberries. For additional protein, you could also mix in a small amount of an unsweetened or low-added-sugar protein powder.
