Strawberry Cheesecake Yogurt Bark



Creamy vanilla yogurt, juicy strawberries, a little almond butter, and a crisp graham-style topping come together in this frozen Strawberry Cheesecake Yogurt Bark. It has the flavors of strawberry cheesecake in a lighter, make-ahead dessert that's easy to portion and keep in the freezer.

Ingredients

  • 2 cups plain Greek yogurt
  • 3 tablespoons whipped cream cheese, softened
  • 2–3 tablespoons allulose, adjusted to taste
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 2 tablespoons natural almond butter
  • 2 tablespoons finely chopped almonds
  • 1 graham cracker sheet, crushed, optional
  • Pinch of salt

Instructions

1. Prepare the pan.
Line a small baking sheet or 9 × 13-inch pan with parchment paper.

2. Make the cheesecake yogurt.
Whisk together the Greek yogurt, softened cream cheese, allulose, vanilla, and a tiny pinch of salt until smooth and creamy.

3. Spread.
Pour the yogurt mixture onto the parchment and spread it into an even layer approximately ¼–½ inch thick.

4. Add the strawberries.
Scatter the diced strawberries evenly over the yogurt and gently press them into the surface.

5. Add the almond butter.
Warm the almond butter for just a few seconds if necessary to make it easier to drizzle. Drizzle it over the bark.

6. Finish the topping.
Sprinkle with chopped almonds and, if using, a small amount of crushed graham cracker for that classic cheesecake-crust flavor.

7. Freeze.
Freeze for 3–4 hours, or until completely firm.

8. Break and enjoy.
Remove the frozen bark from the parchment and break or cut it into pieces. Serve immediately—the yogurt will begin to soften as it sits at room temperature.

💚 Why This Dessert Works

Dessert doesn't have to disappear when someone is trying to build meals around insulin resistance.

Here, Greek yogurt provides protein, strawberries contribute fruit and fiber, and almond butter adds satisfying fat. Using allulose allows us to sweeten the yogurt without relying on a large amount of traditional added sugar.

Increase the cream cheese to ¼ cup for a richer cheesecake flavor.

You can also mash a few strawberries with a teaspoon of allulose and swirl the mixture through the yogurt before freezing. That would create little ribbons of strawberry throughout the bark.

Make-Ahead Tip

Once completely frozen, transfer the pieces to a freezer-safe container with parchment between the layers.

Keep the bark frozen until you're ready to eat it. Because Greek yogurt freezes quite firmly, allowing a piece to sit for a few minutes before eating can give it a creamier texture.
