The Best Sugar Alternatives for Insulin-Resistance-Conscious Cooking

Reducing added sugar doesn't mean everything has to taste unsweetened. From allulose and monk fruit to stevia and erythritol, there are now plenty of alternatives to traditional table sugar—but they don't all taste, cook, or behave the same way.

At Eat Against Resistance, my preferred sugar substitute is allulose. I like its sugar-like taste and versatility in recipes, and it has some particularly interesting characteristics when it comes to blood glucose.

Here's a closer look at several popular alternatives and where each one may fit in your kitchen.

๐Ÿ’š #1 Allulose — My Preferred Sugar Substitute

Allulose is a type of sugar that occurs naturally in small quantities in foods such as figs and raisins, but the body metabolizes it differently from ordinary table sugar.

Although allulose is chemically considered a sugar, the FDA allows manufacturers to exclude it from the Total Sugars and Added Sugars amounts on Nutrition Facts labels. It still appears under Total Carbohydrate. The FDA also permits manufacturers to calculate allulose at approximately 0.4 calories per gram, compared with about 4 calories per gram for traditional sugar.

Why I Like Allulose

One of the biggest advantages is its similarity to regular sugar.

Allulose can work particularly well in:

  • Coffee and tea

  • Sauces and dressings

  • Yogurt

  • Oatmeal

  • Homemade desserts

  • Baked goods

  • Frozen treats

It also provides bulk in recipes, something very concentrated sweeteners such as stevia can't accomplish on their own.

What About Blood Sugar?

Research on allulose is promising but still developing.

Clinical research has found that allulose doesn't behave like ordinary table sugar in the body, and studies have investigated whether consuming it alongside carbohydrate-containing meals can reduce the post-meal glucose response.

That's interesting for an insulin-resistance-focused kitchen, but I don't consider allulose a treatment for insulin resistance or diabetes. It's simply one option for reducing traditional added sugar.

Things to Keep in Mind

Allulose isn't necessarily perfect for everyone. Larger quantities can cause digestive discomfort for some people, so introducing it gradually may be more comfortable.

And because it behaves differently from table sugar during cooking, replacing sugar in a baking recipe isn't always as simple as swapping equal amounts and expecting an identical result.

๐ŸŒฟ #2 Stevia

Stevia sweeteners are produced from highly purified steviol glycosides derived from the stevia plant.

They're incredibly concentrated—the FDA reports that steviol glycosides can be roughly 200–400 times sweeter than table sugar.

That means you need very little.

Best for:

  • Coffee

  • Tea

  • Smoothies

  • Yogurt

  • Drinks

  • Recipes requiring only a small amount of sweetness

Potential downside:

Some people notice a bitter, licorice-like, or lingering aftertaste.

Because stevia provides sweetness without the volume of sugar, baking with it can also require recipe adjustments.

๐Ÿˆ #3 Monk Fruit

Monk fruit sweetener comes from extracts of Siraitia grosvenorii, a fruit native to southern China.

The FDA reports monk fruit extracts can be approximately 100–250 times sweeter than sugar.

Like stevia, that means a tiny amount can provide significant sweetness.

Best for:

  • Drinks

  • Coffee

  • Yogurt

  • Smoothies

  • Sauces

  • Some baking recipes

Read the Ingredient List

Here's an important shopping lesson:

A package labeled "monk fruit sweetener" doesn't necessarily contain only monk fruit extract.

Because pure monk fruit is so intensely sweet, tabletop products may combine it with another ingredient to create something that measures more like sugar.

So rather than relying only on the front of the package, flip it over and read the ingredient list.

๐Ÿฌ #4 Erythritol

Erythritol belongs to a category called sugar alcohols.

Despite the name, sugar alcohols aren't the same thing as the alcohol in alcoholic beverages.

The FDA notes that sugar alcohols generally don't cause the sudden increase in blood glucose associated with traditional sugar.

Erythritol is frequently combined with stevia or monk fruit because it provides some of the volume those intensely sweet ingredients lack.

Best for:

  • Baking blends

  • Sugar-free desserts

  • Sweetener blends

  • Recipes needing additional bulk

Potential downside:

Sugar alcohols can cause gastrointestinal discomfort in some people.

There has also been scientific discussion about erythritol and cardiovascular health. The FDA reviewed research raising this concern and stated that the observational evidence it reviewed did not establish that consuming erythritol caused the observed cardiovascular effects. Research continues, so this is an area worth watching rather than making dramatic claims in either direction.

๐Ÿงช #5 Sucralose

Sucralose is a high-intensity sweetener approximately 600 times sweeter than table sugar.

It's commonly found in reduced-sugar and sugar-free foods and drinks.

Because so little is needed to provide sweetness, it contributes little or no calories in the amounts typically used.

Best for:

  • Beverages

  • Coffee

  • Packaged reduced-sugar foods

  • Certain recipes formulated specifically for it

For Eat Against Resistance, I generally prefer ingredients such as allulose, monk fruit, or stevia when developing recipes, but that doesn't mean foods containing sucralose automatically need to be considered "bad."

For recipes on Eat Against Resistance, my general preference is:

๐Ÿฅ‡ Allulose — My preferred option because of its sugar-like qualities and versatility.

๐Ÿฅˆ Monk Fruit — Particularly useful for adding sweetness without much product.

๐Ÿฅ‰ Stevia — Similar advantages, although the flavor isn't for everyone.

Erythritol — Useful in certain recipes and blends.

Sucralose — Available and intensely sweet, but generally not my first choice for developing recipes.


๐Ÿ“ Sometimes You Don't Need a Sugar Substitute

There's another option that deserves a place in this conversation:

Use less sweetness.

Vanilla, cinnamon, cocoa, berries, apples, bananas and other flavorful ingredients can sometimes reduce how much additional sweetener a recipe needs.

Sugar substitutes can be useful tools, but they aren't something we have to put into every meal.

The World Health Organization recommends reducing overall dietary sweetness rather than relying on non-sugar sweeteners as a long-term weight-control strategy. Importantly, that WHO recommendation specifically doesn't apply to people with pre-existing diabetes, and it doesn't classify low-calorie sugars such as allulose or sugar alcohols in the same non-sugar-sweetener category.

That distinction is important when interpreting headlines about "artificial sweeteners."

Replacing sugar is a tool—not the entire strategy.

A recipe made with allulose isn't automatically a balanced meal simply because traditional sugar has been removed.

Protein, fiber, carbohydrates, fats, portion sizes, vegetables, and the overall eating pattern still matter.

That's why Eat Against Resistance focuses on the whole plate rather than declaring individual foods either good or bad.
