- 1 cup cherry tomatoes

For the Herby Quinoa
- 1 cup dry quinoa, rinsed
- 2 cups low-sodium chicken broth or water
- 2 tablespoons chopped fresh parsley
- 1 tablespoon fresh lemon juice
- 1 teaspoon olive oil
- Black pepper to taste
For the Lemon-Herb Drizzle
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon finely chopped parsley
- ½ teaspoon dried oregano
- ½ teaspoon Dijon mustard
- 1 small garlic clove, finely grated or minced
- Black pepper to taste
Instructions
1. Get the oven ready
Preheat the oven to 425°F. Line a large sheet pan with parchment paper or lightly coat it with cooking spray.
2. Start the quinoa
Add the rinsed quinoa and chicken broth or water to a saucepan. Bring to a boil, then reduce the heat, cover, and simmer according to the package directions, usually about 15 minutes.
Remove from the heat and let it rest, covered, for 5 minutes before fluffing with a fork.
3. Prepare the vegetables
Add the zucchini, bell pepper, red onion, and cherry tomatoes to one side of the prepared sheet pan.
Drizzle with olive oil and season with oregano, garlic powder, salt, and black pepper. Toss until evenly coated.
4. Make the chicken meatballs
In a large bowl, combine the ground chicken, egg, breadcrumbs, garlic, parsley, oregano, lemon zest, onion powder, salt, and black pepper.
Mix gently until everything is just combined. Avoid overmixing, which can make the meatballs firmer.
Form the mixture into approximately 16 meatballs and arrange them on the open side of the sheet pan. Lightly brush or drizzle the meatballs with the remaining olive oil.
5. Roast
Bake the meatballs and vegetables for approximately 20–25 minutes, stirring the vegetables halfway through.
The chicken meatballs are ready when they're cooked through and reach an internal temperature of 165°F.
6. Finish the quinoa
Fluff the cooked quinoa with a fork. Stir in the parsley, lemon juice, olive oil, and a little black pepper.
7. Make the drizzle
Whisk together the olive oil, lemon juice, parsley, oregano, Dijon mustard, garlic, and black pepper.
8. Build your bowls
Divide the herby quinoa among four bowls. Add roasted vegetables and four chicken meatballs to each serving.
Finish with a spoonful of the lemon-herb drizzle and, if you'd like, extra parsley and a fresh lemon wedge.
