They have just enough natural sweetness from apple, with no need for added sugar. And because the apple is paired with oats, almond butter, and chia seeds, this snack offers a combination of carbohydrates, fiber, fat, and some protein rather than fruit on its own.

Ingredients
- 1 cup old-fashioned rolled oats
- ½ cup unsweetened almond butter
- ½ cup finely grated apple
- ¼ cup ground flaxseed
- 2 tablespoons chia seeds
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ¼ teaspoon nutmeg
- Pinch of salt
- 2–4 tablespoons unsweetened almond flour, as needed for texture
Instructions
1. Prepare the apple
Finely grate enough apple to measure ½ cup. Gently press the grated apple with a clean kitchen towel or paper towel to remove some of the excess moisture. You don't need to squeeze it completely dry.
2. Combine the ingredients
Add the oats, almond butter, grated apple, flaxseed, chia seeds, cinnamon, vanilla, nutmeg, and salt to a mixing bowl.
Stir until thoroughly combined.
3. Adjust the texture
Let the mixture sit for about 5–10 minutes so the oats, flaxseed, and chia seeds can begin absorbing moisture.
If the mixture still feels too wet to roll, stir in almond flour 1 tablespoon at a time until it holds together.
4. Roll
Scoop approximately 1 tablespoon of the mixture at a time and roll it between your hands to form a ball.
You should end up with approximately 16 bites.
5. Chill
Place the bites in an airtight container and refrigerate for at least 30 minutes before serving.
Enjoy two for an easy grab-and-go snack.

Fruit doesn't have to be removed from an insulin-resistance-conscious way of eating.

If almond butter isn't your favorite, unsweetened peanut butter or another seed or nut butter can work too. You can also use pumpkin pie spice instead of cinnamon and nutmeg as we move further into fall.
For a little extra crunch, try adding a few tablespoons of finely chopped walnuts or pecans.
And if your apple is especially tart and you'd prefer a sweeter bite, a small amount of allulose can be added to taste.
