Ingredients

  • 2 large eggs
  • 2 large egg whites
  • 1 cup fresh baby spinach
  • ½ cup cherry or grape tomatoes, halved
  • 2 tablespoons crumbled feta cheese
  • ¼ avocado, sliced
  • 1 slice 100% whole-grain bread
  • 1 teaspoon olive oil
  • ¼ teaspoon garlic powder
  • Pinch of black pepper
  • Pinch of salt, optional
  • Red pepper flakes, optional

Instructions

  1. Prepare the eggs. Whisk the whole eggs and egg whites together in a small bowl with the garlic powder and black pepper.
  2. Cook the vegetables. Heat the olive oil in a nonstick skillet over medium heat. Add the tomatoes and cook for about 1–2 minutes. Add the spinach and cook just until wilted.
  3. Add the eggs. Reduce the heat slightly and pour the egg mixture into the skillet. Gently stir and fold the eggs as they cook until they're softly scrambled and cooked through.
  4. Add the feta. Sprinkle the feta over the eggs during the final minute of cooking and gently fold it through.
  5. Build your plate. Serve the scramble with the sliced avocado and toasted whole-grain bread. Add red pepper flakes if you'd like a little heat.
