Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lemon juice

Instructions

  1. Season the chicken. Combine the chicken with olive oil, lemon juice, oregano, garlic powder, paprika, salt, and pepper.
  2. Cook the chicken. Heat a skillet over medium heat. Cook the chicken for approximately 5–7 minutes per side, depending on thickness, until the center reaches 165°F (74°C). Allow it to rest for 5 minutes before slicing.
  3. Make the dressing. Whisk together the olive oil, lemon juice, Dijon mustard, garlic, oregano, and black pepper.
  4. Prepare the vegetables. Chop the cucumber, tomatoes, greens, red onion, and parsley.
  5. Build the bowls. Divide the quinoa and greens among four bowls. Add cucumber, tomatoes, onion, sliced chicken, feta, and parsley.
  6. Finish. Drizzle each bowl with lemon-herb dressing immediately before serving.
