Mallorca French Toast with Guava & Cream Cheese
Servings: 4
Prep Time: 15 minutes
Cook Time: 15–20 minutes
Total Time: Approximately 35 minutes
Ingredients
For the French Toast
4 large mallorca rolls, preferably day-old
3 large eggs
¾ cup milk
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
Pinch of salt
1–2 tablespoons butter, for cooking
For the Guava Sauce
3 ounces guava paste, cubed
3 tablespoons water, plus more as needed
1 teaspoon fresh lime juice
For the Cream Cheese Drizzle
3 ounces cream cheese, softened
¼ cup plain Greek yogurt
2–3 tablespoons milk
½ teaspoon vanilla extract
Optional Garnishes
Light dusting of powdered sugar
Fresh fruit
Extra cinnamon
Instructions
1. Prepare the mallorca.
Slice each mallorca roll horizontally into two thick halves.
If the bread is very fresh and soft, let the slices sit uncovered for about 20–30 minutes to dry slightly.
Day-old bread works especially well because it absorbs the custard without falling apart.
2. Make the custard.
In a shallow bowl, whisk together the eggs, milk, vanilla, cinnamon, and salt.
Whisk until smooth.
3. Cook the French toast.
Heat a large nonstick skillet or griddle over medium heat and melt a little butter.
Dip each mallorca half into the custard, allowing it to absorb some liquid without becoming completely saturated.
Cook for approximately 2–3 minutes per side, until golden brown and the egg custard is cooked through.
Work in batches, adding butter as needed.
Keep the finished pieces warm while preparing the toppings.
4. Make the guava sauce.
Combine the cubed guava paste and water in a small saucepan over medium-low heat.
Stir frequently for approximately 3–5 minutes, until the paste melts into a smooth, glossy sauce.
Add more water a teaspoon at a time if needed.
Stir in the lime juice.
The sauce should be thick enough to coat a spoon but loose enough to drizzle.
And yes, you should taste it.
For scientific purposes. π
5. Make the cream cheese drizzle.
In a small bowl, beat the softened cream cheese until smooth.
Add the Greek yogurt, vanilla, and 2 tablespoons milk.
Whisk until creamy, adding the remaining milk if needed to reach a drizzleable consistency.
For an extra-smooth sauce, use a small blender or food processor.
6. Assemble and serve.
Arrange two mallorca halves on each plate.
Spoon a little warm guava sauce over the French toast.
Add a swirl of cream cheese drizzle.
Finish with a light dusting of powdered sugar or a little cinnamon if desired.
Serve immediately.
Preferably alongside a cup of cafΓ© con leche.
Because if we're going to have a Puerto Rican bakery-inspired breakfast, we might as well commit to the experience. π☕π΅π·
What Is Mallorca Bread?
Mallorca is a soft, sweet, spiral-shaped bread popular in Puerto Rican bakeries.
It's commonly dusted with powdered sugar and enjoyed on its own or used for breakfast sandwiches, including sweet-and-savory combinations with ham and cheese.
Its tender texture makes it especially delicious for French toast.
This recipe is inspired by Puerto Rican mallorca, rather than a traditional French toast dish with a fixed cultural recipe.
If you can't find mallorca, brioche, challah, or Hawaiian sweet bread will also work.
The flavor won't be identical, but the result will still be delicious.
Why Guava & Cream Cheese?
Guava and cream cheese are a beloved sweet-and-tangy combination in many Caribbean and Latin American pastries.
Guava paste has a concentrated fruity flavor and a thick consistency that melts beautifully into a sauce.
The cream cheese adds tanginess that balances the sweetness of the bread and guava.
Together, they create a topping that feels rich and special without needing a long list of ingredients.
Sometimes the best flavor combinations are already classics for a reason. π
Can a Sweet Breakfast Fit With Insulin Resistance?
Yes, depending on individual needs.
Mallorca bread contains carbohydrates, and guava paste typically contains added sugar.
The eggs and dairy contribute protein, but that doesn't make the carbohydrates disappear.
For someone managing diabetes or insulin resistance, carbohydrate amounts, serving sizes, medications, and individual blood-glucose responses may be relevant.
That doesn't mean every sweet breakfast needs to be replaced with protein powder pancakes or sugar-free substitutes.
Understanding the ingredients allows readers to make informed choices while still enjoying culturally meaningful foods.
Food can support health and celebrate culture at the same time. π΅π·π
Easy Variations
No mallorca: Substitute brioche, challah, or Hawaiian sweet bread.
Extra fruit: Add sliced strawberries or fresh guava, if available.
More cinnamon: Increase the cinnamon in the custard to ¾ teaspoon.
Tangier drizzle: Add a small squeeze of lime juice to the cream cheese mixture.
No Greek yogurt: Use additional milk to thin the cream cheese, adjusting until smooth.
Less guava sauce: Use whatever amount suits your taste. The topping is flavorful, so a little can go a long way.
Make Ahead & Storage
The guava sauce can be prepared up to 3 days ahead and refrigerated in an airtight container.
Reheat gently with a splash of water until smooth.
The cream cheese drizzle can also be refrigerated for approximately 2–3 days. Stir before serving and thin with a little milk if needed.
Cooked French toast can be refrigerated for 3–4 days or frozen for longer storage.
Reheat in a toaster oven, skillet, or oven until heated through.
For the best texture, store the French toast and toppings separately.
