One-Pan Tuscan Chicken & White Beans

Creamy, garlicky, comforting—and made in one skillet.

Some dinners just need to be easy.

This One-Pan Tuscan Chicken & White Beans brings together tender chicken, creamy cannellini beans, juicy tomatoes, spinach, garlic, and Italian herbs in a savory skillet dinner that feels cozy enough for a comfort-food night but practical enough for a busy weeknight.

And the best part? The beans aren't just along for the ride. They add fiber, plant-based protein, and satisfying carbohydrates, helping turn a simple chicken skillet into a complete meal.

Servings: 4
Prep Time: 10 minutes
Cook Time: 25–30 minutes
Total Time: About 40 minutes

Ingredients

  • 1½ pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 cup cherry or grape tomatoes, halved
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • ¾ cup low-sodium chicken broth
  • ½ cup unsweetened, unflavored oat milk or lactose-free milk
  • ¼ cup finely grated Parmesan cheese, optional
  • 3 cups fresh baby spinach
  • ½ teaspoon dried basil
  • ¼ teaspoon crushed red pepper flakes, optional
  • Fresh basil or parsley for serving, optional

Instructions

1. Season the chicken.
Pat the chicken dry and season both sides with salt, black pepper, Italian seasoning, and paprika. If the chicken breasts are particularly thick, slice them horizontally into thinner cutlets so they cook more evenly.

2. Sear the chicken.
Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for approximately 4–5 minutes per side, or until nicely browned and cooked through to 165°F (74°C). Transfer the chicken to a plate and set aside.

3. Build the flavor.
In the same skillet, add the onion and cook for about 3 minutes, until it begins to soften. Add the garlic and tomatoes and cook for another 1–2 minutes.

4. Add the beans and sauce.
Stir in the cannellini beans, chicken broth, milk, dried basil, and red pepper flakes if using. Bring everything to a gentle simmer and cook for about 5 minutes.

5. Make it creamy.
If using Parmesan, reduce the heat to low and stir it into the skillet until incorporated. Add the spinach and gently stir until wilted.

6. Bring everything together.
Return the chicken to the skillet and spoon some of the beans and sauce around and over it. Simmer for another 2–3 minutes, just long enough for everything to heat through.

Finish with fresh basil or parsley and serve.

Why This Meal Works

Instead of asking “How do I remove the carbs?”, this dinner gives us a chance to ask a more useful question:

“What are the carbohydrates being eaten with?”

Cannellini beans provide carbohydrates along with fiber and plant-based protein. Pairing them with chicken, vegetables, and olive oil creates a meal containing several nutrients rather than relying on a carbohydrate source by itself.

The spinach and tomatoes also add vegetables without turning dinner into a giant salad—and that's sometimes exactly what we need. 💚

Individual blood-glucose responses can differ, so portion sizes and carbohydrate needs won't be identical for everyone.

Make It Your Own

This recipe is easy to adjust. Chicken thighs can replace chicken breasts if that's what your household prefers. Great northern or navy beans can stand in for cannellini beans, and kale can replace the spinach—just give it a little longer to soften.

For a dairy-free version, use an unsweetened non-dairy milk and leave out the Parmesan or use a dairy-free alternative.

Want additional carbohydrates with dinner? Serve it with a portion of whole-grain pasta, farro, or whole-grain bread. There's no rule that says the beans have to be the only carbohydrate on the plate.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

Reheat gently on the stovetop or in the microwave until the chicken reaches 165°F. If the sauce thickens in the refrigerator, stir in a splash of broth or milk while reheating.
