Crunchy, savory, and packed with flavor, these Crispy Ranch Roasted Chickpeas are an easy alternative when you're craving chips or something salty. Chickpeas naturally provide both fiber and plant-based protein, making them a convenient snack that doesn't require eliminating carbohydrates to create balance.
Prep time: 5 minutes
Cook time: 30–40 minutes
Servings: 4
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon extra-virgin olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried dill
- ½ teaspoon dried parsley
- ¼ teaspoon smoked paprika
- ¼ teaspoon black pepper
- ⅛ teaspoon salt, or to taste
Instructions
- Preheat the oven. Heat your oven to 400°F.
- Dry the chickpeas really well. After rinsing, spread them over a clean kitchen towel or paper towels and gently pat dry. Removing as much moisture as possible helps them become crispy.
- Transfer the chickpeas to a baking sheet. Add the olive oil and toss until lightly coated.
- Roast for 20 minutes, shaking the pan halfway through.
- Meanwhile, combine the garlic powder, onion powder, dill, parsley, paprika, black pepper, and salt in a small bowl.
- Remove the chickpeas from the oven, sprinkle with the seasoning mixture, and toss well.
- Return to the oven for another 10–15 minutes, or until golden and crispy.
- Allow them to cool on the baking sheet. They'll become crispier as they cool.
🥗 Why This Snack Works
Chickpeas are interesting because they provide carbohydrates, fiber, and plant protein in the same food.
Fiber-rich carbohydrate: chickpeas
Plant protein: chickpeas
Healthy fat: olive oil
Flavor: herbs + spices
Instead of reaching for a snack made primarily from refined carbohydrates, you're getting something crunchy while also adding fiber and protein.
🍽️ Make It More Satisfying
If you're genuinely hungry rather than just looking for something crunchy, turn these into a more substantial snack.
Try approximately ½ cup roasted chickpeas alongside sliced cucumber and bell pepper.
Or make a mini snack plate with:
Roasted chickpeas + cucumber + a few olives + a small portion of feta
That gives you different flavors and textures without turning your snack into a full meal.
🔄 Change the Flavor
Once you learn the basic technique, you can actually turn this one recipe into several snacks.
🌮 Taco: Chili powder + cumin + garlic + smoked paprika
🔥 Spicy: Smoked paprika + cayenne + garlic
🌿 Italian: Garlic + oregano + basil + rosemary
🍋 Lemon Pepper: Black pepper + garlic + lemon zest

💚 Eat Against Resistance Tip
A carbohydrate-containing food doesn't automatically make something a poor snack choice.
Look at what else the food brings to the table. Chickpeas provide carbohydrates along with fiber and plant protein, which is very different nutritionally from many highly refined snack foods.
